Broiled Salmon and Asparagus with Crème Fraîche

Serves 4

Ingredients
2 bunches asparagus (about 2 lbs. total)
3 tablespoons extra-virgin olive oil
About 3/4 tsp. kosher salt, divided
About 1/2 tsp. pepper, divided
4 skinned salmon fillets (5 to 6 oz. each)
1/2 cup crème fraîche
1 tablespoon each whole-grain mustard and chopped fresh chives

Directions
Preheat broiler with oven rack about 4 in. from heat.

Low Carb Chips

Cut up low carb tortillas into pieces, coated them in a mixture of olive oil and these cheese powders(for popcorn) or seasonings.

Baked at 350 for about 6 minutes.

Makes the perfect chip I

Caprese Stuffed Garlic Butter Portobellos

Garlic butter smothered Portobello Mushrooms stuffed and grilled with fresh mozzarella cheese, grape tomato slices, and drizzled with a rich balsamic glaze.
Ingredients

2 tablespoons butter
2 cloves garlic, crushed
1 tablespoon freshly chopped parsley

Mushrooms:
5-6 large Portobello Mushrooms, stem removed, washed and dried with a paper towel
5-6 fresh mozzarella cheese balls, sliced thinly
1 cup grape (or cherry) tomatoes, sliced thinly
fresh basil, shredded to garnish

Balsamic Glaze: (or you can use store bought, or this recipe)
1/4 cup balsamic vinegar

Low Carb Pizza

Gluten Free, Low Carb, Diabetic Friendly!!!!!!
For when you absolutely want pizza but not all the carbs!!!!!!!

Crust

1 (8 oz) package of full fat cream cheese, room temperature
2 eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 cup grated parmesan cheese

Topping
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
toppings - pepperoni, ham, sausage, mushrooms, peppers
Garlic powder

Preheat oven to 350.

Linda's Taco Bake

Crust:
4 ounces cream cheese, softened
2 eggs
1/2 teaspoon Taco Seasoning
8 ounces cheddar cheese, shredded (2 cups)
Put all of the crust ingredients in a large bowl and mix with a wooden spoon until smooth. Grease a 9 x 13" baking dish; spread the cheese mixture evenly over the bottom. Bake at 350º, 35 minutes or until browned, but not too dark. Let stand 5-10 minutes before adding the topping.

Topping:
1 pound ground beef
3 teaspoons Taco Seasoning
1/4 cup tomato sauce
4 ounce can chopped green chiles
8 ounces cheddar cheese, shredded, 2 cups

BLT Dip

1 lb. bacon
2 tomatoes, ripe, diced
1 C. sour cream
1 C. mayonnaise

Fry the bacon very crisp and drain on paper towels.
When cool, crumble into small pieces and set aside. Combine the sour cream and mayonnaise. Add the bacon and mix well.

Just before serving, fold in tomatoes and stir gently until well distributed.

Low Carb Pancakes

1 cup of almond flour
2 eggs
1 teaspoon of baking powder and cinnamon

Stir in unsweetened vanilla almond milk until perfect, thick consistency.

Fry in cast iron with butter.
Perfection.

Low Carb Pizza Crust

Crust:
1 egg
1 cup Parmesan cheese
1 cup mozzarella cheese
oregano
basil

Will make paste, press paste into glass pie pan (sprayed with cooking spray).

Bake crust at 400 until cooked then take out of oven.

After the crust cools, add toppings (I had a little pizza sauce, mozzarella cheese, pepperoni) then bake the pizza on a pizza stone (at 475) until done.

About 10 carbs for the whole pizza.

Blueberry Crepes (Low Carb)

2 ounces of cream cheese,
2 large eggs
35 grams of blueberries
a dash of cinnamon.

I blend the eggs & cream cheese together then add the blueberries – and fry in real butter over medium heat in a nonstick skillet.

This made 6 small crepes, and I made 2 smaller meals out of it.
Total for whole batch: 8 net carbs, 592 calories, 82% healthy fats.

Skillet Pizza (Low Carb)

Ingredients
Handful of shredded mozzarella cheese - just enough to cover the bottom of a 10-inch skillet
1-2 tablespoons canned crushed tomatoes (no sugar added)
Pepperoni slices
Garlic powder
Italian seasoning or dried basil
Crushed red pepper, Parmesan cheese, and fresh basil (optional)

Instructions
Heat small, nonstick skillet over medium.
Cover the bottom of hot skillet evenly with shredded mozzarella cheese.
Lightly spread the crushed tomatoes on top of the cheese, using the back of a spoon, and leaving a border around the edges of the cheese crust.

Macaroons (Low Carb)

4 egg whites
2 cups unsweetened shredded coconut
1 tsp of vanilla
1/2 C. Splenda (or to taste) .

Pre heat oven 350 Degrees
Beat egg whites to stiff peaks, fold in the vanilla and sweetener with a spatula and the add the coconut. Do NOT overmix, use a Tablespoon to drop mixture on a parchment lined cookie sheet.

Bake approximately 10 min or until lightly browned.

Total carbs per macaroon 2 - 0.12 fiber. so approximately 1.5 carbs per cookie

Zero Carb Cloud Bread

Ingredients:
3 eggs
3 Tbsp full fat cream cheese, room temperature...
1/2 tsp. baking powder or cream of tartar

Directions:
Preheat oven to 300°F with trays covered in parchment inside.
Separate the yolks and whites of your eggs.
Add cream cheese, (sweetener and salt optional) to the egg yolks. Whisk to combine. You don't want any lumps so it's very important that this is room temperature cream cheese!

Add baking powder to egg whites. Whip up to stiff peaks.
Softly stir yolk mixture into whites– don't overmix! Just combine until you have a cohesive light yellow mixture.

Low Carb Cream Cheese Pancakes

4 oz soft cream cheese
4 eggs, beat well
Add 2 tsp vanilla
dash cinnamon
2 tsp. baking powder
4 T coconut flour

The recipe called for sweetener too, but I did not add. The Sugar Free Syrup made them sweet enough.

Low Carb Cloud Bread

3 eggs, separated
3 Tablespoons cream cheese
¼ teaspoon baking powder (or cream of tartar)

**Optional: 1 Tablespoon Honey or some natural sweetener, salt, garlic powder, rosemary

Directions
Preheat oven to 150 degrees Celsius
Separate the eggs, there must be no yolk in the white.
In one bowl, mix together the egg yolks, cream cheese and honey until smooth.

Parmesan Zucchini "Fries"

small zucchini cut into wedges
1 c. Parmesan cheese plus 1/2 garlic power
1 egg whisked

Dipped in egg then in cheese mixture (next time I'll add ground pepper and red pepper flakes)

Placed on a greased baking sheet, and baked @435 for 28 minutes, my oven off on temp so adjust for your oven.

Atleast it was different than fried/steamed with onions and butter

Whopper Salad (Low Carb)

Whopper Salad (Low Carb)
Servings: 4

INGREDIENTS
1 lb ground sirloin
1 dash liquid smoke
salt and pepper, to taste
6 slices white American cheese
1 1/2 cups iceberg lettuce, chopped
1/2 cup tomatoes, chopped

DRESSING
2 tablespoons dill pickle relish
2 tablespoons chopped onions
2 tablespoons mayonnaise
1 tablespoon low sugar ketchup

DIRECTIONS
Brown the ground beef with the liquid smoke, salt and pepper; drain off the fat if desired.
Add the cheese, if using, and cook until it melts.
Put the lettuce in a large serving bowl.
Top with the meat and tomatoes.

Cauli Mash

Break the cauliflower into florets I have also used frozen in a bag (just make sure it is drained well)
Steam the cauliflower until it is mushy.

Using a stick blender or food processor, puree the cauliflower until smooth.

Continue to puree, add the milk, then the butter,  cream cheese   and beat until smooth and silky.

Season to taste and serve.

3/4 cup coconut oil...
