Macaroons (Low Carb)

4 egg whites
2 cups unsweetened shredded coconut
1 tsp of vanilla
1/2 C. Splenda (or to taste) .

Pre heat oven 350 Degrees
Beat egg whites to stiff peaks, fold in the vanilla and sweetener with a spatula and the add the coconut. Do NOT overmix, use a Tablespoon to drop mixture on a parchment lined cookie sheet.

Bake approximately 10 min or until lightly browned.

Total carbs per macaroon 2 - 0.12 fiber. so approximately 1.5 carbs per cookie
